THE HISTORY

Pepper is a vegetable originating from regions of Latin America where tropical and subtropical climates prevail. Evidence suggests its cultivation began in areas of Peru and Mexico around 5,000 BC, but after the discovery of the Americas, peppers became widely known and consumed in many parts of the world.

VARIETY

Peppers start off firm and green, gradually changing color to yellow, orange, and finally intense red as they ripen. The color of the pepper indicates the stage at which it is harvested.

HARVESTING

Harvesting typically occurs from mid-May to late autumn; however, due to large-scale greenhouse cultivation, they are available in markets year-round. Because of their crispness and relatively neutral flavor, peppers are consumed raw in salads and sandwiches, but they can also be cooked in various ways and serve as a side dish for many meals.
