Ingredients:

  • 2 peppers, any color
  • 2 eggs or 4 egg whites
  • 1 tomato
  • ½ cup shredded cheese
  • Spices of your choice

Instructions:

  1. Cut off the tops of the peppers and wash them thoroughly, removing the seeds.
  2. In a bowl, mix the eggs, tomato (diced into small cubes), half of the shredded cheese, and your chosen spices.
  3. Fill the peppers halfway with the mixture, sprinkle the remaining cheese on top, and cover them with their “lids.”
  4.  Bake in the oven or in an air fryer until the eggs are cooked to your desired level.
