
Ingredients:
- 2 peppers, any color
- 2 eggs or 4 egg whites
- 1 tomato
- ½ cup shredded cheese
- Spices of your choice
Instructions:
- Cut off the tops of the peppers and wash them thoroughly, removing the seeds.
- In a bowl, mix the eggs, tomato (diced into small cubes), half of the shredded cheese, and your chosen spices.
- Fill the peppers halfway with the mixture, sprinkle the remaining cheese on top, and cover them with their “lids.”
- Bake in the oven or in an air fryer until the eggs are cooked to your desired level.
